Ingredients

  • 113 grams unsalted butter, softened
  • 100 grams granulated sugar
  • 120 ml honey
  • 1 unit large egg
  • 1 teaspoon vanilla extract
  • 240 grams all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt

Directions

Step 1

Preheat your oven to 175°C (350°F). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, use an electric mixer to cream together the softened butter and granulated sugar until light and fluffy, about 2 minutes.

Step 3

Add the honey, egg, and vanilla extract to the creamed mixture. Mix until well combined, scraping down the sides of the bowl as necessary.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. Do not overmix.

Step 6

Using a tablespoon or cookie scoop, portion out small balls of dough and place them 2 inches apart on the prepared baking sheets.

Step 7

Gently press each dough ball slightly to flatten it, as the cookies will not spread much during baking.

Step 8

Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden. Be careful not to overbake; the cookies should remain soft.

Step 9

Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve the cookies plain or garnish with a light drizzle of additional honey for an extra touch of sweetness. Store in an airtight container at room temperature for up to 5 days.
