  • 2.25 cups All-purpose flour

  • 2 teaspoons Baking soda
  • 0.75 cups Unsalted butter, softened
  • 1 cups Brown sugar, packed
  • 0.25 cups Granulated sugar
  • 1 large Egg
  • 0.25 cups Molasses
  • 0.33 cups Granulated sugar (for rolling)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium bowl, whisk together the flour, ground ginger, cinnamon, cloves, salt, and baking soda. Set aside.

Step 3

In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar (1/4 cup) using an electric hand mixer or stand mixer set to medium speed, until light and fluffy (about 2-3 minutes).

Add the egg and molasses to the butter mixture and beat until well combined.
