Ingredients

  • 500 grams Ground beef
  • 2 tablespoons Olive oil
  • 1 medium Onion
  • 2 cloves Garlic cloves
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Chili powder
  • 2 tablespoons Tomato paste
  • 120 milliliters Beef stock
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 pieces Tortillas
  • 150 grams Cheddar cheese, shredded
  • 100 grams Lettuce, shredded
  • 2 medium Tomatoes, diced
  • 120 milliliters Sour cream
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

Heat the olive oil in a large skillet over medium-high heat.

Step 2

Peel and finely dice the onion and garlic. Add them to the skillet and sauté for 3-4 minutes until softened and fragrant.

Step 3

Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook for 6-8 minutes, or until browned and fully cooked through.

Step 4

Stir in the ground cumin, paprika, chili powder, salt, and black pepper. Cook for 1-2 minutes to toast the spices.

Step 5

Add the tomato paste and beef stock to the skillet. Stir well to combine and let the mixture simmer for 5-6 minutes, reducing slightly to a thick, flavorful sauce.

Step 6

While the beef cooks, warm the tortillas in a dry skillet or microwave until soft and pliable.

Step 7

To assemble the tortillas, spread a spoonful of beef mixture down the center of each tortilla.

Step 8

Layer lettuce, diced tomatoes, shredded cheddar cheese, a dollop of sour cream, and a sprinkle of chopped cilantro over the beef.

Step 9

Fold and serve immediately, with optional hot sauce or lime wedges on the side for added flavor.
