Ingredients

  • 113 grams unsalted butter
  • 150 grams brown sugar (packed)
  • 50 grams granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 130 grams all-purpose flour
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 160 grams old-fashioned rolled oats
  • 100 grams raisins or chocolate chips (optional)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line two large baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, use an electric mixer to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2 minutes).

Step 3

Add the egg and vanilla extract to the bowl. Beat until well combined, ensuring the mixture is smooth and creamy.

Step 4

In a separate mixing bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Step 6

Stir in the rolled oats and optional raisins or chocolate chips until evenly distributed.

Step 7

Using a tablespoon or a cookie scoop, portion the dough into 18 evenly-sized balls and place them on the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Gently press each ball down slightly with your hand or the back of a spoon to flatten them slightly.

Step 9

Bake in the preheated oven for 9-11 minutes, or until the cookies are slightly golden around the edges. Do not overbake; the centers should still look soft.

Step 10

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Serve and enjoy your soft-baked oatmeal cookies fresh, or store them in an airtight container at room temperature for up to 5 days.
