  • 2 whole Green bell peppers
  • 1 whole Red bell pepper
  • 2 medium Onions
  • 8 whole Garlic cloves
  • 1 bunch Cilantro
  • 5 leaves Culantro (optional, for extra flavor)
  • 8 whole Ají dulces (sweet peppers)
  • 2 medium Tomatoes
  • 2 tablespoons Olive oil

Directions

Step 1

Wash all the vegetables and herbs thoroughly to ensure they are clean.

Step 2

Cut the green and red bell peppers into chunks, discarding the seeds and membranes.

Step 3

Peel and quarter the onions.

Step 4

Peel the garlic cloves.

Step 5

Chop the cilantro roughly, including the stems as they add flavor.

Step 6

If using culantro, rinse and roughly chop the leaves.

Step 7

Remove the stems and seeds from the ají dulces (sweet peppers).

Step 8

Cut the tomatoes into chunks.

Step 9

Combine all of the prepared vegetables and herbs in a food processor or blender.

Add the olive oil to help create a smooth consistency.
