Ingredients

  • 2 large green bell peppers
  • 1 large red bell pepper
  • 1 large yellow onion
  • 6 large garlic cloves
  • 1 cup (packed) cilantro leaves
  • 6 leaves culantro leaves (optional)
  • 2 medium plum tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt

Directions

Step 1

Wash all your vegetables, cilantro, and culantro leaves thoroughly under cold water. Pat them dry with a clean cloth or paper towel.

Step 2

Remove the stems, seeds, and membranes from the green and red bell peppers. Roughly chop the peppers into large chunks.

Step 3

Peel the onion and roughly chop it into quarters.

Step 4

Peel the garlic cloves and set them aside.

Step 5

If using culantro leaves, remove the woody stems. Tear the leaves into smaller pieces to help with blending.

Step 6

Chop the tomatoes into quarters for easier blending.

In a large blender or food processor, combine the chopped bell peppers, onion, garlic cloves, cilantro leaves, culantro leaves (if using), and tomatoes.

Add the olive oil and salt to the blender or food processor.
