  • 4 pieces bone-in, skin-on chicken thighs
  • 500 grams baby potatoes
  • 3 medium carrots
  • 1 large red onion
  • 3 tablespoons olive oil
  • 3 cloves garlic cloves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 medium lemon
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Wash and chop the baby potatoes into halves or quarters, ensuring they are bite-sized. Peel and slice the carrots into thick rounds. Peel the red onion and cut it into wedges. Mince the garlic cloves.

Step 3

Place the prepared potatoes, carrots, red onion, and garlic in a large mixing bowl. Drizzle with 2 tablespoons of olive oil and season with half of the dried thyme, dried oregano, paprika, salt, and pepper. Toss to coat evenly.

Pat the chicken thighs dry with a paper towel and place them on a cutting board. Drizzle with the remaining 1 tablespoon of olive oil and season with the remaining thyme, oregano, paprika, salt, and pepper.
