Ingredients

  • 250 grams All-purpose flour
  • 50 grams Semolina
  • 50 grams Ghee (clarified butter)
  • 0.5 teaspoons Salt
  • 150 milliliters Water
  • 200 grams Khoya (mawa)
  • 100 grams Powdered sugar
  • 0.5 teaspoons Cardamom powder
  • 2 tablespoons Chopped almonds
  • 2 tablespoons Chopped pistachios
  • 500 milliliters Oil, for frying

Directions

Step 1

In a large bowl, combine the all-purpose flour, semolina, ghee, and salt. Mix well until the mixture resembles breadcrumbs.

Step 2

Slowly add water to the flour mixture, kneading continuously to form a soft, pliable dough. Cover the dough with a damp cloth and let it rest for 15-20 minutes.

Step 3

In another bowl, crumble the khoya and mix it with powdered sugar, cardamom powder, chopped almonds, and chopped pistachios to make the stuffing.

Divide the dough into 10 equal portions and roll each portion into a smooth ball.

Flatten each dough ball into a small circle using your fingers or a rolling pin. Place about a tablespoon of the khoya stuffing in the center of the circle.

Bring the edges of the dough circle together to seal the stuffing inside and form a ball again. Ensure there are no open seams.

Gently flatten the stuffed ball into a disc, about 1/4 inch thick, using a rolling pin.

Heat oil in a deep frying pan over medium heat.

Fry each sochen in the hot oil until it turns golden brown on both sides. Remove with a slotted spoon and drain on paper towels.
