  • 200 grams Chorizo sausage, sliced

  • 1 large Red bell pepper, diced
  • 3 medium Potatoes, peeled and cubed
  • 1 liter Chicken or vegetable stock
  • 1 teaspoon Paprika (smoked or sweet)
  • 2 pieces Bay leaves
  • 400 grams Cooked white beans (canned or freshly prepared)
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Chopped parsley, for garnish

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.

Step 2

Add the sliced chorizo and cook for 3-4 minutes, stirring occasionally, until it releases its oil and begins to brown.

Stir in the diced onion and cook for 5 minutes or until softened and translucent.

Step 4

Add the minced garlic and diced red bell pepper to the pot and cook for another 2-3 minutes, stirring frequently.

Add the cubed potatoes and stir to combine with the other ingredients.

Pour in the chicken or vegetable stock, ensuring the potatoes are fully submerged.
