Ingredients

  • 8 ounces Soba noodles
  • 2 tablespoons Sesame oil
  • 3 cloves Garlic
  • 1 inch Ginger
  • 1 medium Carrot
  • 1 medium Red bell pepper
  • 1 cup Snap peas
  • 1 cup Shiitake mushrooms
  • 3 tablespoons Soy sauce
  • 2 tablespoons Hoisin sauce
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Honey
  • 2 stalks Green onions
  • 1 tablespoon Sesame seeds
  • 1 tablespoon Vegetable oil

Directions

Step 1

Bring a pot of water to a boil and cook the soba noodles according to package instructions. Drain and rinse under cold water to prevent sticking. Set aside.

Step 2

Heat the sesame oil in a large skillet or wok over medium heat.

Finely mince the garlic and grate the ginger. Add both to the skillet and sauté for 1-2 minutes until fragrant.

Thinly slice the carrot and red bell pepper, and add them to the skillet. Stir-fry for 2-3 minutes.
