Ingredients

  • 250 grams soba noodles
  • 1 medium carrot, julienned
  • 1 medium cucumber, julienned
  • 1 medium red bell pepper, thinly sliced
  • 1 cup edamame, shelled and cooked
  • 3 stalks scallions, thinly sliced
  • 1 tablespoon sesame seeds
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon honey
  • 1 teaspoon wasabi paste
  • 1 teaspoon grated ginger
  • 1 tablespoon lime juice

Directions

Step 1

Bring a large pot of water to a boil and cook the soba noodles according to the package instructions (usually 4-5 minutes).

Step 2

Drain and rinse the soba noodles under cold water to stop the cooking process. Set aside to cool completely.

Step 3

In a large mixing bowl, combine the julienned carrot, cucumber, red bell pepper, cooked edamame, and sliced scallions.

Step 4

In a separate small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, wasabi paste, grated ginger, and lime juice to create the vinaigrette.

Step 5

Add the cooled soba noodles to the bowl with the vegetables. Pour the vinaigrette over the top and toss everything together until well coated.

Step 6

Sprinkle the sesame seeds over the salad and toss again lightly.

Step 7

Divide the salad into bowls or plates and serve immediately, or chill for 30 minutes before serving for a colder dish.
