Ingredients

  • 200 grams Soba noodles
  • 60 ml Soy sauce
  • 50 ml Mirin
  • 200 ml Dashi stock
  • 1 tablespoon Sugar
  • 2 stalks Green onions
  • 1 sheet Nori (seaweed)
  • 1 tablespoon Sesame seeds
  • 1 teaspoon Wasabi or grated ginger (optional)

Directions

Step 1

Bring a large pot of water to a boil. Add the soba noodles and cook according to the package instructions (usually 5-7 minutes) until tender but not mushy.

Step 2

Drain the noodles and rinse them thoroughly under cold running water to remove excess starch. Set aside to drain.

Step 3

In a small saucepan, combine the soy sauce, mirin, dashi stock, and sugar. Heat gently over medium-low heat, stirring until the sugar dissolves. Remove from heat and let the dipping sauce cool to room temperature.

Step 4

Thinly slice the green onions and cut the nori sheet into thin strips for garnishing. Toast the sesame seeds in a dry skillet over low heat for 2-3 minutes until fragrant, if desired.

Step 5

Divide the cold soba noodles into serving bowls or plates. Sprinkle the green onions, nori strips, and toasted sesame seeds on top.

Step 6

Serve with the dipping sauce in small individual bowls or cups. Optionally, add a small amount of wasabi or grated ginger to the dipping sauce for extra flavor.

Step 7

To eat, dip the soba noodles into the sauce and enjoy!
