Ingredients

  • 1 teaspoon Honey or maple syrup
  • 1 Garlic clove, finely grated
  • 1 teaspoon Ginger, finely grated
  • 2 Green onions (scallions), thinly sliced
  • 1 Cucumber, julienned
  • 1 Carrot, julienned
  • 0 Optional toppings: nori strips and toasted sesame seeds

Directions

Step 1

Bring a large pot of water to a boil and cook the soba noodles according to the package instructions (usually 4-5 minutes). Once cooked, drain and rinse the noodles under cold water to remove excess starch. Set aside.
