Ingredients

  • 200 grams Soba noodles
  • 1 liter Dashi stock
  • 3 tablespoons Soy sauce
  • 2 tablespoons Mirin
  • 1 teaspoon Sugar
  • 100 grams Shiitake mushrooms
  • 75 grams Baby spinach
  • 2 stalks Scallions
  • 2 units Soft-boiled egg
  • 1 teaspoon Sesame seeds
  • 1 teaspoon Optional chili oil
  • 1 pinch Salt

Directions

Step 1

Bring a medium pot of water to a boil. Cook the soba noodles according to the package instructions (typically 5-7 minutes). Drain and rinse the noodles thoroughly under cold water to stop the cooking process and remove excess starch. Set aside.

Step 2

In a medium saucepan, heat the dashi stock over medium heat. Stir in soy sauce, mirin, and sugar. Adjust seasoning with a pinch of salt if needed, and let the broth simmer gently.

Step 3

Slice the shiitake mushrooms thinly. Add them to the simmering broth and cook for 5-7 minutes until tender.

Step 4

While the mushrooms cook, prepare the garnishes. Slice the scallions finely, and set aside. If using soft-boiled eggs, peel and halve them.

Step 5

Add the baby spinach to the broth and cook for 1-2 minutes, just until wilted.

Step 6

Divide the cooked soba noodles into serving bowls. Ladle the hot broth, mushrooms, and spinach over the noodles.

Step 7

Top each bowl with a halved soft-boiled egg, scallions, and a sprinkle of sesame seeds. Drizzle with optional chili oil for heat, if desired.

Step 8

Serve hot and enjoy this comforting dish!
