Ingredients

  • 12 oz fettuccine pasta
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 2 cups cherry tomatoes, halved

  • 0.5 cup parmesan cheese, grated
  • 0.25 cup fresh basil leaves, chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup reserved pasta cooking water

Directions

Step 1

1. Bring a large pot of salted water to a boil. Cook the fettuccine according to the package instructions until al dente. Reserve 1 cup of the pasta cooking water and drain the rest.

2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.

3. Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.

4. Stir in the halved cherry tomatoes and cook for 3-4 minutes, stirring occasionally, until the tomatoes start to soften and release their juices.
