Directions

Step 1

Wash the baby potatoes thoroughly, leaving the skins on. Cut them into bite-sized chunks.

Step 2

Slice the smoked sausage into 1/4-inch thick rounds. Core and slice the bell peppers into strips, and thinly slice the onion. Mince the garlic cloves.

Step 3

In a large skillet or sauté pan, heat 2 tablespoons of olive oil over medium heat.
