  • 2 lbs beef stew meat
  • 2 tbsp olive oil
  • 1 large yellow onion

  • 3 celery stalks

  • 6 cups beef broth
  • 1 bay leaf
  • 1 tsp dried thyme
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 cup frozen peas

Directions

Step 1

Heat 2 tablespoons of olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Season the beef stew meat with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Brown the meat in batches, making sure not to overcrowd the pot. Set the browned meat aside.
