Ingredients

  • 300 grams snow peas
  • 50 grams sliced almonds
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 teaspoon lemon zest
  • 2 tablespoons water

Directions

Step 1

Rinse the snow peas thoroughly under cold water and trim the ends, removing any strings if necessary.

Step 2

Heat a dry skillet over medium-low heat. Add the sliced almonds and toast them for 3-4 minutes, stirring occasionally, until golden and fragrant. Remove and set aside.

Step 3

In the same skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

Step 4

Add the snow peas to the skillet and stir to coat them in the garlic and oil. Season with salt and ground black pepper.

Step 5

Pour in 2 tablespoons of water, cover the skillet with a lid, and let the snow peas steam for 2-3 minutes until they are bright green and slightly tender but still crisp.

Step 6

Remove the lid and stir in the toasted almonds and lemon zest. Mix well to combine.

Step 7

Transfer the dish to a serving platter and serve immediately as a side dish.
