Cut the chicken breasts into thin strips and season with salt and pepper.
In a small bowl, mix 1 tablespoon of soy sauce, 1 tablespoon of water, and the cornstarch to create a marinade. Pour the marinade over the chicken, toss to coat, and set aside for 10 minutes.
While the chicken marinates, wash the snow peas and trim the ends.
In another small bowl, combine the remaining soy sauce, oyster sauce, sesame oil, and 2 tablespoons of water to create the stir-fry sauce. Set aside.
