Preheat your oven to 175°C (350°F) and grease two 9-inch round cake pans. Line the bottoms with parchment paper for easy removal.
In a medium bowl, sift together the cake flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream the unsalted butter and granulated sugar together using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
Gradually add the egg whites to the butter and sugar mixture, one at a time, mixing well after each addition.
Stir in the vanilla extract.
Alternately add the dry ingredients and the milk to the wet mixture, beginning and ending with the dry ingredients. Mix just until combined; do not overmix.
Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.
Bake in the preheated oven for 28-30 minutes, or until a toothpick inserted into the center of each cake comes out clean.
Remove the cakes from the oven and allow them to cool completely in the pans on a wire rack. Once cool, carefully remove them from the pans.
To make the frosting, whip the heavy cream in a large bowl using an electric mixer on high speed until soft peaks form. Gradually add the powdered sugar and continue beating until stiff peaks form.
Place one cake layer on a serving plate and spread a generous layer of whipped cream frosting on top. Place the second cake layer on top and frost the entire cake with the remaining whipped cream.
If using shredded coconut for decoration, gently press it onto the sides and top of the cake to create a snowy effect.
Refrigerate the snow cake for at least 1 hour before serving to allow the flavors to meld and the frosting to set.
Slice and serve chilled for the best taste. Enjoy your fluffy, snow-like cake!
