Ingredients

  • 1 cup unsalted butter
  • 1 cup semi-sweet chocolate chips
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 0.333 cup unsweetened cocoa powder
  • 0.5 teaspoon salt
  • 14 ounces caramels (unwrapped)
  • 0.333 cup heavy cream
  • 1 cup roasted peanuts
  • 1 cup milk chocolate chips
  • 1 tablespoon vegetable oil

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy removal later.

Step 2

In a microwave-safe bowl, melt the butter and semi-sweet chocolate chips in 30-second increments, stirring after each, until smooth. Let the mixture cool slightly.

Step 3

Whisk the granulated sugar and brown sugar into the melted butter and chocolate mixture. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Step 4

In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.

Step 5

Pour the brownie batter into the prepared pan and smooth the surface with a spatula.

Step 6

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs. Let the brownies cool completely in the pan.

Step 7

While the brownies cool, prepare the caramel layer. In a microwave-safe bowl, combine the unwrapped caramels and heavy cream. Heat in 30-second increments, stirring often, until fully melted and smooth.

Step 8

Pour the melted caramel evenly over the cooled brownie layer. Sprinkle the roasted peanuts over the caramel layer and gently press them down. Let this layer set until firm.

Step 9

For the chocolate topping, melt the milk chocolate chips and vegetable oil in a microwave-safe bowl in 30-second increments, stirring until smooth.

Step 10

Spread the melted chocolate evenly over the caramel and peanut layer. Let the chocolate set completely at room temperature or in the refrigerator.

Step 11

Once set, carefully lift the brownies out of the pan using the parchment overhang. Cut into 16 squares and serve. Enjoy!
