  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 tablespoons tomato paste
  • 28 ounces canned crushed tomatoes
  • 1 cup vegetable broth or chicken broth
  • 1 whole bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon sugar (optional)
  • 0 Parmesan cheese (optional for topping)
  • 0 fresh parsley (optional for garnish)

Directions

Step 1

Heat the olive oil in a large pot or deep skillet over medium heat.

Add the diced onion and sauté for 3-4 minutes until softened and translucent.

Stir in the grated carrots, grated zucchini, and diced bell pepper. Cook for another 5-6 minutes, stirring occasionally, until the vegetables start to soften.
