  • 2 whole Large eggs
  • 0.5 cups Milk
  • 1.5 cups Grated zucchini (unpeeled)
  • 0.5 cups Mini chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.

Step 2

In a medium mixing bowl, whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, combine the granulated sugar and vegetable oil. Beat with a whisk or hand mixer until well blended.

Add the vanilla extract and eggs to the sugar mixture and beat until smooth.

Mix in the milk to the wet ingredients until fully combined.
