Directions

Step 1

Transfer the cooked carrots and sweet potato to a blender or food processor, and add the reserved 1/2 cup of cooking liquid.

Blend or process until the mixture is completely smooth. If the puree seems too thick, add a bit more water, one tablespoon at a time, until it reaches your desired consistency.

Let the puree cool completely, then transfer it to an airtight container. Store in the refrigerator for up to 3 days or freeze in portions for future use.
