Ingredients

  • 4 pieces snapper fillets (with skin on)
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 2 cloves garlic cloves, minced
  • 1 whole lemon, juiced
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions

Step 1

Pat the snapper fillets dry with paper towels. Score the skin lightly with a sharp knife to prevent curling during cooking.

Step 2

Season both sides of the fillets with salt and black pepper.

In a large skillet, heat the olive oil over medium-high heat until shimmering.

Place the fillets skin-side down in the skillet. Press gently with a spatula to keep the skin flat. Cook for 3-4 minutes or until the skin is crispy and golden brown.
