  • 1 cup Diced tomatoes (canned or fresh)
  • 0.5 cup White wine
  • 0.75 cup Chicken or seafood stock
  • 2 tablespoons Lemon juice
  • 1 teaspoon Cajun seasoning
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Green onions, thinly sliced

Directions

Step 1

Pat the red snapper fillets dry with paper towels. Season both sides with salt and black pepper.

Step 2

Dredge the fillets lightly in the all-purpose flour, shaking off any excess. Set aside on a plate.
