  • 450 grams fresh snapper fillet
  • 1 cup panko breadcrumbs

  • 2 tablespoons fresh parsley, chopped
  • 2 scallions, finely chopped
  • 2 eggs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons olive oil

Directions

Step 1

Preheat a large skillet over medium heat and add 1 tablespoon of olive oil.

Cook the snapper fillets in the skillet for 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork. Remove the fillets and let them cool slightly.
