Ingredients

  • 4 pieces red snapper fillets
  • 4 tablespoons olive oil
  • 2 tablespoons unsalted butter

  • 1 teaspoon black pepper
  • 1 whole lemon
  • 4 medium russet potatoes
  • 4 pieces garlic cloves
  • 0.5 cup heavy cream
  • 2 tablespoons fresh parsley
  • 0.5 cup vegetable or chicken stock

Directions

Step 1

Peel the russet potatoes and cut them into evenly sized cubes. Rinse under cold water and set aside.

Step 2

In a large pot, add the potato cubes and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat. Reduce to a simmer and cook for 10-15 minutes until the potatoes are fork-tender. Drain and set aside.

While the potatoes cook, mince the garlic cloves finely.
