Ingredients

  • 1 cup All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.25 cup Granulated sugar
  • 0.25 cup Brown sugar, packed
  • 0.5 cup Unsweetened applesauce
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1 cup Finely grated carrots
  • 0.25 cup Crushed pineapple, drained
  • 2 tablespoons Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking pan or line it with parchment paper.

Step 2

In a medium-sized mixing bowl, sift together the all-purpose flour, baking soda, cinnamon, and salt. Set aside.

Step 3

In a larger mixing bowl, whisk together the granulated sugar, brown sugar, and unsweetened applesauce until well combined.

Step 4

Add the egg and vanilla extract to the wet mixture, whisking until smooth.

Step 5

Gradually add the dry ingredients into the wet mixture, stirring gently with a spatula or wooden spoon until just combined. Do not overmix.

Step 6

Fold in the grated carrots, crushed pineapple, and walnuts (if using) until evenly distributed.

Step 7

Pour the batter into the prepared baking pan, spreading it out into an even layer.

Step 8

Bake for 25-28 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Remove the pan from the oven and allow the carrot cake to cool completely in the pan before slicing into 8 squares.

Step 10

Serve as-is for a 3-point healthier snack, or add a small dollop of light cream cheese frosting if desired (adjust points as needed). Enjoy!
