Ingredients

  • 1 pound Pork tenderloin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Cornstarch
  • 0.25 cup Vegetable oil
  • 0.75 cup Smucker's Apricot Preserves
  • 0.25 cup Rice vinegar
  • 2 tablespoons Soy sauce
  • 2 tablespoons Ketchup
  • 1 cup Pineapple chunks (canned)
  • 1 medium Green bell pepper, diced
  • 1 medium Red bell pepper, diced
  • 2 cloves Garlic, minced
  • 2 cups Cooked white rice (optional, for serving)

Directions

Step 1

Cut the pork tenderloin into bite-sized pieces and season with salt and black pepper.

Step 2

Place the cornstarch in a shallow bowl and dredge the pork pieces in it, ensuring they are evenly coated. Shake off any excess.

Step 3

Heat the vegetable oil in a large skillet or wok over medium-high heat. Working in batches, add the pork and cook until golden brown and crispy, about 2-3 minutes per side. Remove and set aside on a paper towel-lined plate.

Step 4

In a medium bowl, whisk together Smucker's Apricot Preserves, rice vinegar, soy sauce, and ketchup to make the sweet and sour sauce.

Step 5

In the same skillet, remove excess oil, leaving about 1-2 tablespoons. Add the minced garlic and cook for 30 seconds until fragrant.

Step 6

Add the diced green and red bell peppers to the skillet and stir-fry for 3-4 minutes until slightly softened.

Step 7

Add the pineapple chunks (with a little juice from the can, about 2 tablespoons) to the skillet and stir to combine.

Step 8

Pour the sweet and sour sauce into the skillet and bring it to a simmer. Let it cook for 2 minutes until slightly thickened.

Step 9

Return the cooked pork to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes to heat through.

Step 10

Serve the sweet and sour pork hot over cooked white rice, if desired.
