Ingredients

  • 4 pieces bone-in pork chops
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup all-purpose flour
  • 0.5 cup vegetable oil
  • 2 tablespoons unsalted butter
  • 2 large yellow onion
  • 3 cloves garlic
  • 2 cups chicken broth
  • 0.5 cup heavy cream
  • 1 large white onion
  • 1 cup buttermilk
  • 0.25 cup cornstarch
  • 1 teaspoon baking powder
  • 0.75 cup milk
  • 4 cups frying oil

Directions

Step 1

Season the pork chops with 1 teaspoon salt, 1/2 teaspoon pepper, and paprika. Let them sit for 10 minutes to absorb the flavors.

Step 2

Dredge the pork chops in 1/2 cup of all-purpose flour, shaking off any excess flour.

Step 3

Heat 1/2 cup vegetable oil in a large skillet over medium-high heat. Sear the pork chops for 4-5 minutes on each side, or until golden brown. Remove and set aside.

Step 4

Reduce the heat to medium. Melt 2 tablespoons of butter in the same skillet and add the sliced yellow onions. Cook for 7-8 minutes until softened and caramelized.

Step 5

Add minced garlic to the onions and sauté for another minute until fragrant.

Step 6

Sprinkle 2 tablespoons of flour over the onions and stir well to combine. Cook for 1 minute to remove the raw flour taste.

Step 7

Gradually whisk in the chicken broth, scraping up any browned bits from the bottom of the skillet. Simmer for 5 minutes until the mixture thickens slightly.

Step 8

Stir in the heavy cream and return the pork chops to the skillet. Cover and cook on low heat for about 25 minutes, or until the pork chops are fully cooked and tender.

Step 9

While the pork chops are cooking, peel and slice the white onion into 1/4-inch thick rings. Soak the onion rings in buttermilk for 10 minutes.

Step 10

In a separate bowl, whisk together 1/2 cup all-purpose flour, cornstarch, 1 teaspoon salt, 1/2 teaspoon pepper, and baking powder. Gradually mix in milk to form a smooth batter.

Step 11

Heat 4 cups of frying oil in a deep pot to 375°F (190°C).

Step 12

Dip the onion rings into the batter, ensuring they are fully coated, and immediately fry in the hot oil in small batches for 2-3 minutes until golden and crisp. Drain on paper towels.

Step 13

To serve, plate the smothered pork chops with a generous spoonful of onion gravy and top with crispy fried onion rings. Enjoy!
