Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon smoked paprika
  • 0.25 cup all-purpose flour
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 large yellow onion, thinly sliced
  • 2 pieces provolone or Swiss cheese slices
  • 0.25 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon honey
  • 2 pieces burger or sandwich buns, split and toasted
  • 2 pieces lettuce leaves
  • 4 slices tomato slices

Directions

Step 1

Season the chicken breasts on both sides with salt, black pepper, garlic powder, and smoked paprika.

Step 2

Dredge the chicken breasts lightly in all-purpose flour, shaking off any excess.

Step 3

Heat a large skillet over medium heat and add 1 tablespoon of butter and 1 tablespoon of olive oil.

Step 4

Add the chicken to the skillet and cook for 4-5 minutes on each side until golden brown and cooked through to an internal temperature of 165°F (74°C). Remove the chicken and set aside.

Step 5

In the same skillet, add the remaining tablespoon of butter and the sliced onion. Cook over medium heat, stirring occasionally, for about 10 minutes until the onions are golden and caramelized.

Step 6

Place the cooked chicken breasts back in the skillet and top each with a slice of cheese. Cover with a lid for 1-2 minutes or until the cheese melts.

Step 7

In a small bowl, mix together the mayonnaise, Dijon mustard, and honey to create the sauce.

Step 8

Spread the prepared sauce generously on the cut sides of the toasted buns.

Step 9

Assemble the sandwiches by layering a lettuce leaf and two tomato slices on the bottom bun. Place the smothered chicken breast on top, followed by the top bun.

Step 10

Serve immediately with your favorite side dishes such as fries or a green salad.
