  • 1 pound ground beef

  • 2 cups cooked rice
  • 2 tablespoons taco seasoning
  • 20 ounces red enchilada sauce
  • 2 cups, shredded cheddar cheese
  • 1 cup sour cream
  • 2 tablespoons, sliced green onions
  • 1 tablespoon cooking oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat the cooking oil over medium heat.

Step 3

Add the diced onion and minced garlic to the skillet. Sauté until the onion is translucent, about 5 minutes.

Add the ground beef to the skillet, breaking it apart with a spatula. Cook until the beef is browned and cooked through, about 7-10 minutes.
