  • 3 tablespoons soy sauce
  • 3 tablespoons kecap manis (sweet soy sauce)
  • 2 cups chicken stock
  • 2 leaves bay leaves
  • 2 cups white rice
  • 1 cup coconut milk
  • 2 cups water
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 stalks scallions, sliced (for garnish)
  • 0.25 cup fried shallots (optional, for garnish)

Directions

Step 1

Heat the cooking oil in a large, deep skillet or pot over medium heat. Add the chopped onion and sauté until softened and translucent, about 5 minutes.

Add the minced garlic and grated ginger to the skillet, cooking for an additional 1-2 minutes until fragrant.

Stir in the nutmeg, cinnamon, and bruised lemongrass stalk, cooking for another 30 seconds to release the spices' aroma.
