Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons unsalted butter
  • 0.25 cup milk
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 1 medium red bell pepper, diced
  • 3 pieces garlic cloves, minced
  • 1 pound ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 2 pieces chipotle peppers in adobo, chopped
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon chili powder
  • 0.5 cup chicken or beef broth
  • 1 cup shredded cheddar cheese

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel and cube the sweet potatoes. Place them in a pot of salted water and bring to a boil. Cook until fork-tender, about 15 minutes.

Step 3

Drain the sweet potatoes and mash them with butter, milk, salt, and black pepper. Set aside.

Step 4

Heat olive oil in a large skillet over medium heat. Add the diced onion and red bell pepper, and sauté until softened, about 5 minutes.

Step 5

Add the minced garlic to the skillet and cook for 1 minute until fragrant.

Step 6

Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.

Step 7

Stir in black beans, corn, chipotle peppers, tomato paste, ground cumin, smoked paprika, chili powder, and a pinch of salt. Mix well.

Step 8

Pour in the chicken or beef broth and let the mixture simmer for 5 minutes, allowing the flavors to meld. Remove from heat.

Step 9

Transfer the beef mixture to a 9-inch baking dish, spreading it out evenly.

Step 10

Spoon the mashed sweet potatoes over the beef mixture, smoothing them out to create an even layer.

Step 11

Sprinkle the shredded cheddar cheese over the top.

Step 12

Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.

Step 13

Let the Shepherd's Pie cool for 5 minutes before serving. Enjoy!
