Ingredients

  • 4 large caps Portabella mushrooms
  • 4 tablespoons Olive oil
  • 2 teaspoons Smoked paprika
  • 1 teaspoon Garlic powder
  • 2 tablespoons Soy sauce
  • 0.5 cup (chopped) Sun-dried tomatoes
  • 0.25 cup (chopped) Fresh basil leaves
  • 1 small (sliced into rings) Red onion
  • 4 large leaves Lettuce leaves
  • 4 pieces Vegan or regular burger buns
  • 0.25 cup Vegan mayo or aioli
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Clean the portabella mushroom caps by gently wiping with a damp paper towel, and remove the stems if needed.

Step 2

In a small bowl, mix olive oil, smoked paprika, garlic powder, soy sauce, salt, and pepper into a marinade.

Step 3

Brush the marinade generously over both sides of the mushroom caps and let them sit for 10 minutes to absorb the flavors.

Step 4

While the mushrooms are marinating, preheat a grill or grill pan over medium-high heat.

Step 5

Grill the marinated mushroom caps for 4-5 minutes on each side until tender and slightly charred. Remove from heat and set aside.

Step 6

Toast the burger buns on the grill for 1-2 minutes or until golden brown.

Step 7

Spread a thin layer of vegan mayo or aioli on the bottom half of each bun.

Step 8

Layer the lettuce leaves, grilled mushroom caps, chopped sun-dried tomatoes, fresh basil, and red onion rings onto each bun.

Step 9

Finish with the top bun, pressing gently to hold the burger together.

Step 10

Serve immediately and enjoy your smoky homemade portabella burgers!
