Ingredients

  • 4 cups cooked jasmine rice (preferably day-old)
  • 3 tablespoons vegetable oil
  • 1 teaspoon smoked paprika
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 1 onion, diced
  • 1 carrot, diced
  • 1 red bell pepper, diced
  • 1 cup frozen peas
  • 3 green onions, sliced
  • 2 eggs, lightly beaten
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper

Directions

Step 1

Break apart the chilled, cooked rice with your hands or a fork to remove clumps and set aside.

Step 2

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the beaten eggs and scramble them until just set, then remove from the skillet and set aside.

Step 3

Heat the remaining 2 tablespoons of vegetable oil in the same skillet over medium-high heat. Add the minced garlic and ginger, cooking for 30 seconds until fragrant.
