Ingredients

  • 16 oz elbow macaroni
  • 4 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 1 tsp smoked paprika
  • 1 tsp ground mustard
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 cups sharp cheddar cheese, grated
  • 1 cup smoked gouda cheese, grated
  • 1 cup parmesan cheese, grated
  • 1 cup panko breadcrumbs
  • 2 tbsp olive oil
  • 0.5 tsp extra smoked paprika (for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish and set aside.

Step 2

Bring a large pot of salted water to a boil. Cook the macaroni according to package instructions until just al dente. Drain and set aside.

Step 3

In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes until lightly golden and bubbling.

Step 4

Gradually pour in the milk and heavy cream, whisking constantly to prevent lumps. Continue to cook over medium heat until the mixture thickens, about 5-7 minutes.

Step 5

Stir in the smoked paprika, ground mustard, salt, and black pepper.

Step 6

Remove the saucepan from the heat and stir in the cheddar cheese, smoked gouda, and parmesan cheese. Mix until the cheeses have fully melted and the sauce is creamy.

Step 7

Add the cooked macaroni to the cheese sauce and stir until evenly coated.

Step 8

Pour the macaroni and cheese mixture into the prepared baking dish and spread it out evenly.

Step 9

In a small bowl, combine the panko breadcrumbs, olive oil, and extra smoked paprika. Toss until the breadcrumbs are evenly coated.

Step 10

Sprinkle the breadcrumb mixture evenly over the top of the macaroni and cheese.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and crispy.

Step 12

Remove from the oven and let cool for 5 minutes before serving. Enjoy your Smokin Macaroni and Cheese!
