Ingredients

  • 1 cup Ketchup
  • 2 tablespoons Brown sugar
  • 2 tablespoons White vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Soy sauce
  • 2 tablespoons Fresh lime juice
  • 1.5 tablespoons Jerk seasoning
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Ground allspice
  • 0.5 teaspoon Crushed red pepper flakes (optional)
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Ground ginger
  • 0.5 teaspoon Liquid smoke
  • 0.25 cup Water
  • 1 Fresh scotch bonnet or habanero pepper (optional, finely minced)

Directions

Step 1

In a medium saucepan, combine the ketchup, brown sugar, white vinegar, Worcestershire sauce, soy sauce, and fresh lime juice.

Step 2

Over medium heat, whisk the mixture until the sugar dissolves and it comes to a gentle simmer.

Step 3

Add the jerk seasoning, smoked paprika, ground allspice, crushed red pepper flakes (if using), garlic powder, onion powder, ground ginger, and liquid smoke to the saucepan.

Step 4

Stir well to combine the spices into the sauce.

Step 5

If using, finely mince the scotch bonnet or habanero pepper (wear gloves!) and add it to the saucepan for extra spice. Stir thoroughly.

Step 6

Gradually pour in the water to thin the sauce slightly. Stir to ensure the sauce has a smooth consistency.

Step 7

Lower the heat to medium-low and let the sauce simmer for 10-15 minutes, stirring occasionally, until it thickens to your desired consistency.

Step 8

Taste and adjust seasoning if needed (add more sugar for sweetness, lime juice for tanginess, or jerk seasoning for heat).

Step 9

Remove from heat and let the sauce cool. Transfer to a clean jar or airtight container.

Step 10

Store in the refrigerator for up to 2 weeks. Use as a glaze, dip, or marinade for your favorite meats, poultry, or vegetables.
