  • 1 14-ounce can canned diced tomatoes
  • 6 cups vegetable broth
  • 1 15-ounce can (drained and rinsed) kidney beans
  • 1 cup frozen corn
  • 2 cups (fresh) spinach leaves
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon liquid smoke (optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onion, sliced carrots, and celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
