Ingredients

  • 12 oz Rotini pasta
  • 1 cup Sweet corn kernels (fresh, frozen, or canned)

  • 1 large Red bell pepper (diced)
  • 1 cup Cherry tomatoes (halved)
  • 0.5 medium Red onion (finely chopped)
  • 0.25 cup Fresh cilantro (chopped)
  • 1 tsp Chipotle chili powder
  • 1 tsp Ground cumin
  • 0.5 tsp Smoked paprika
  • 0.5 tsp Garlic powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cup Olive oil
  • 2 tbsp Fresh lime juice
  • 1 large Avocado (diced)
  • 0.5 cup Shredded cheddar cheese (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rotini pasta according to the package instructions until al dente (approximately 8-10 minutes). Drain and rinse under cold water to cool the pasta quickly. Set aside.

Step 2

If using fresh corn, cook the kernels in boiling water for 2-3 minutes, or until tender. If using frozen corn, thaw it. If using canned corn, drain it. Set aside.

Step 3

In a large mixing bowl, combine the cooled pasta, sweet corn, black beans, diced red bell pepper, halved cherry tomatoes, red onion, and cilantro.
