  • 4 lbs Chicken (whole, cut into pieces)

  • 2 peppers Scotch bonnet peppers (seeded for less heat, optional)
  • 1 tbsp Ground allspice
  • 0.5 tsp Ground cinnamon
  • 0.5 tsp Ground nutmeg
  • 0.25 tsp Ground cloves
  • 2 tbsp Brown sugar
  • 2 tbsp Soy sauce
  • 2 tbsp Lime juice (freshly squeezed)
  • 2 tbsp Vegetable oil
  • 2 tsp Salt
  • 1 tsp Black pepper

Directions

Step 1

In a food processor or blender, combine scallions, thyme, garlic, ginger, Scotch bonnet peppers, allspice, cinnamon, nutmeg, cloves, brown sugar, soy sauce, lime juice, vegetable oil, salt, and black pepper. Blend into a smooth paste to create the jerk marinade.

Step 2

Place the chicken pieces in a large bowl or zip-top bag. Pour the jerk marinade over the chicken, ensuring all pieces are well-coated. Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to penetrate the meat.
