  • 6 cups chicken or duck stock
  • 0.5 cup heavy cream
  • 3 sprigs fresh thyme sprigs
  • 1 leaf bay leaf
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Peel and cube the sweet potatoes into roughly 1-inch pieces. Set aside.

Step 2

Dice the yellow onion, mince the garlic, and dice the celery and carrot into small pieces.

Step 3

Slice the smoked duck breast into thin strips and set aside.

Step 4

Heat olive oil over medium heat in a large soup pot or Dutch oven.

Add the diced onion, garlic, celery, and carrot to the pot. Cook for 5-7 minutes, stirring occasionally, until softened and aromatic.
