Ingredients

  • 12 oz Smoked turkey sausage
  • 12 oz Penne pasta
  • 2 tbsp Olive oil
  • 3 Garlic cloves, minced
  • 1 tsp Crushed red pepper flakes
  • 14.5 oz Canned diced tomatoes
  • 0.5 cup Heavy cream
  • 0.5 cup Grated Parmesan cheese
  • 3 cups Fresh spinach leaves
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 2 tbsp Fresh basil, chopped (optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set it aside.

Step 2

Cut the smoked turkey sausage into 1/4-inch-thick slices.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the sliced turkey sausage and cook for 4-5 minutes, stirring occasionally, until lightly browned.

Step 4

Add the minced garlic and crushed red pepper flakes to the skillet, cooking for an additional 1-2 minutes until fragrant.

Step 5

Stir in the canned diced tomatoes (including the juices) and the heavy cream. Let the mixture come to a gentle simmer, stirring occasionally, for about 5 minutes.

Step 6

Add the fresh spinach leaves to the skillet and cook for 2 minutes, stirring, until the spinach is wilted.

Step 7

Mix in the grated Parmesan cheese and season the sauce with salt and black pepper to taste.

Step 8

Add the cooked penne pasta to the skillet, tossing to coat the pasta in the sauce. If the sauce is too thick, use the reserved pasta cooking water to loosen it to your desired consistency.

Step 9

Remove the skillet from heat and garnish with chopped fresh basil, if desired.

Step 10

Serve immediately, dividing the pasta into bowls and offering additional Parmesan cheese on the side.
