Ingredients

  • 8 slices Smoked turkey breast
  • 2 tablespoons Cranberry sauce (homemade or store-bought)
  • 2 tablespoons Unsalted butter (softened)
  • 4 slices Rustic bread (sourdough or ciabatta)
  • 1 cup Baby spinach or arugula
  • 4 slices Sharp cheddar cheese (optional)
  • 1 pinch Salt
  • 1 pinch Black pepper (freshly ground)
  • 1 tablespoon Olive oil or butter (for toasting, if desired)

Directions

Step 1

In a small bowl, mix the cranberry sauce with the softened butter until fully combined and smooth. Add a pinch of salt to balance the sweetness if desired. Set aside.

Step 2

Lay out the slices of bread on a clean surface. Spread a generous layer of cranberry butter on one side of each slice.

Step 3

On two of the bread slices, layer 4 slices of smoked turkey breast each. Follow with 2 slices of sharp cheddar cheese if using.

Step 4

Add a handful of baby spinach or arugula on top of the turkey and cheese. Sprinkle a pinch of freshly ground black pepper over the greens.

Step 5

Top the sandwiches with the remaining slices of bread, cranberry butter side down, to close them.

Step 6

For a toasted sandwich, heat a skillet over medium heat and add a small amount of olive oil or butter. Place the sandwiches in the skillet and cook for 2-3 minutes on each side, pressing gently with a spatula, until the bread is golden and the cheese melts (if included).

Step 7

Remove the sandwiches from the skillet, cut them in half if desired, and serve warm or at room temperature. Enjoy!
