Ingredients

  • 1 cup couscous
  • 1.25 cups chicken or vegetable stock
  • 2 tablespoons olive oil
  • 1.5 cups smoked turkey breast
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 0.5 cup red onion, finely chopped
  • 0.25 cup parsley, chopped
  • 0.25 cup mint leaves, chopped
  • 0.5 cup feta cheese, crumbled
  • 0.25 cup sliced almonds, toasted
  • 2 tablespoons lemon juice
  • 0.5 teaspoons ground cumin
  • 0.25 teaspoons paprika
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Bring the chicken or vegetable stock to a boil in a medium saucepan. Remove from heat, add the couscous, and cover with a lid. Let it sit for 5 minutes until the liquid is absorbed.

Step 2

Fluff the couscous with a fork and transfer it to a large mixing bowl. Drizzle with 1 tablespoon of olive oil and let it cool to room temperature.

Step 3

While the couscous cools, prepare the vegetables and other salad components. Dice the smoked turkey breast into bite-sized pieces, halve the cherry tomatoes, dice the cucumber, and finely chop the red onion, parsley, and mint.

Step 4

Once the couscous has cooled, add the turkey, cherry tomatoes, cucumber, red onion, parsley, mint, and crumbled feta cheese to the bowl.

Step 5

In a small bowl, whisk together the remaining tablespoon of olive oil, lemon juice, ground cumin, paprika, salt, and black pepper to create the dressing.

Step 6

Pour the dressing over the couscous mixture and toss gently to combine.

Step 7

Sprinkle the toasted sliced almonds over the salad for a crunchy finishing touch.

Step 8

Serve immediately, or refrigerate for up to 2 hours to allow the flavors to meld. Enjoy your Smoked Turkey and Middle Eastern Couscous Salad!
