  • 2 pieces large ripe tomatoes
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 2 pieces garlic cloves
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons water

Directions

Step 1

Preheat your grill or stovetop grill pan to medium-high heat.

Step 2

Rinse the tomatoes and pat them dry. Rub them generously with 1 tablespoon of olive oil.

Step 3

Place the tomatoes and unpeeled garlic cloves directly on the grill. Cook the tomatoes for 10-12 minutes, turning occasionally, until the skins are slightly charred and the tomatoes are softened. Cook the garlic cloves for about 6-8 minutes, turning occasionally, until slightly softened and charred.

Remove the tomatoes and garlic from the grill. Let them cool for a few minutes.

Peel the garlic and roughly chop the grilled tomatoes, removing any burnt skin or core if desired.
