Slice the smoked sausage into 1/2-inch rounds and set aside.
Core and thinly slice the cabbage. Peel, core, and slice the apples into wedges. Peel and thinly slice the yellow onion.
In a large skillet or Dutch oven, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat.
Add the sliced smoked sausage to the skillet and brown on both sides, about 5 minutes. Remove the sausage from the skillet and set aside.
Add the remaining olive oil and butter to the skillet. Once melted, add the sliced onion. Sauté for 3-4 minutes until softened and translucent.
Stir in the cabbage and cook for 5-7 minutes, stirring occasionally, until it begins to soften.
Add the apple slices to the skillet and continue to cook for another 5 minutes, allowing the flavors to blend.
Sprinkle the apple cider vinegar, brown sugar, salt, black pepper, paprika, and optional ground caraway seeds over the mixture. Stir to combine and distribute the seasonings evenly.
Return the browned sausage slices to the skillet. Stir everything together and reduce the heat to low. Cover the skillet with a lid and let it cook for 10 more minutes, stirring occasionally, until the cabbage is tender and the flavors have melded.
Taste and adjust seasoning with additional salt and pepper, if needed.
Serve hot as a main dish or alongside crusty bread or mashed potatoes for an even heartier meal.
