Ingredients

  • 1 pound smoked sausage
  • 3 medium potatoes
  • 3 medium carrots
  • 2 celery stalks
  • 1 large yellow onion
  • 3 cloves garlic
  • 14.5 ounces canned diced tomatoes
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley

Directions

Step 1

Slice the smoked sausage into 1/4-inch rounds, and set aside.

Step 2

Peel and dice the potatoes into bite-sized cubes. Slice the carrots and celery into thin pieces. Dice the onion and mince the garlic.

Step 3

Heat the olive oil in a large stockpot or Dutch oven over medium heat.

Add the sliced sausage to the pot and cook for 4-5 minutes until browned. Remove the sausage and set aside, leaving the rendered fat in the pot.
