Ingredients

  • 12 oz smoked sausage
  • 1 tbsp olive oil
  • 1 medium yellow onion
  • 3 medium carrots
  • 2 stalks celery stalks
  • 3 cloves garlic cloves
  • 2 large russet potatoes
  • 14.5 oz diced tomatoes
  • 6 cups chicken broth
  • 2 cups kale leaves
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Slice the smoked sausage into 1/4-inch rounds and set aside.

Step 2

Heat the olive oil in a large soup pot or Dutch oven over medium heat.

Step 3

Dice the onion, slice the carrots and celery, and mince the garlic cloves.

Step 4

Add the sliced smoked sausage to the pot and cook until browned, about 3-4 minutes. Remove the sausage and set it aside.
